Slow Roasted Sockeye Salmon
Date: January 29th, 2010
- 1 plum tomato
- 1/2 seedless orange with rind
- 1 tablespoon(s) Sambal Oelek chili paste (you can substitute any Asian chili paste)
- 6 salmon fillets
- Salt
- Preheat oven to 250 degrees. Finely chop 1 plum tomato and half a seedless orange with rind. Mix with 1 tablespoon Sambal Oelek chili paste. Cut a 1-inch slit down the center of 6 salmon fillets. Season with Salt, then spoon mixture into slits. Place in a large baking dish, mixture side up; roast in oven for 25 minutes, until opaque on outside with a pinkish center.
